I started using Anytype. I love Notion but it annoys me so much that theres no offline mode for it. Here's were AnyType is better as it's design is made by offline first.

Still in an beta an a few things missing, but I really like it so far. Oh. And the whole sync backend can be self hosted - what I did for my personal workspace with a provided docker project.
